VEGAN POTAGE VELOUTÉ AUX CHAMPIGNONS

[Cream of Mushroom Soup]


...this was the first course of our Christmas Dinner...and it was so very good - I love mushroom soup and thought that I made a pretty good 'from scratch' version already...but this mushroom soup definitely outshines any that I've had...

...begin by mincing some onion...

...as with so many of Julia's recipes you begin by cooking some onions slowly in butter (Earth Balance) until tender but not browned...

...add some flour...

...off heat add some stock - I used vegetable stock...

...separate the mushroom stems from the caps...

...and chop the stems...

...add the stems to the stock...

...and you can't see it here but my tea ball is in there with the parsley and thyme and bay leaf...

...let that cook for about 20 minutes occasionally skimming off the foam...

...thinly slice the mushroom caps...I used my handy-dandy Veg-O-Matic...

...add those to a pan of foaming butter (Earth Balance)...

...then add a little bit of lemon juice...

...and some salt...

...cover and cook slowly for 5 minutes...


...remove the tea ball (or sprigs of parsley if you did it that way) from the soup base...

...and strain the soup base - pressing the juice out of the mushroom stems...

...add the prepared mushroom caps to the soup base...

...and reheat to the simmer...

...add two flax seed goo eggs (about 4 tablespoons) to 1/2 cup of cream (soymilk enriched with 2 tablespoons of powdered soymilk)...

...whisk in some of the hot soup base...

...then add the 'egg' mixture to the pot of soup...

...just before serving - stir in some butter (Earth Balance)...

...isn't that pretty...

...thick and creamy...

...and oh so good - a perfect start to our Christmas Dinner...

Substitutions:
Earth Balance for Butter
Soymilk mixed with soymilk powder for the cream
Flax seed goo for the eggs
Vegetable stock for the stock

Vegan Omelettes Gratinées à la Tomate

[Tomato-filled Omelettes Gratinéed With Cream and Cheese]


Oh My! was this ever good...another omelette recipe - I used the same omelette mixture as before...so...very...good...

...First you make your omelette...and the COULIS DE TOMATES À LA PROVENÇALE - Julia says to cut a slit along the omelette and fill the slit with the sauce - but we made ours like the rolled omelette and filled it and rolled it up...

...Julia says to use whipping cream or crème fraîche...

...so I sort of combined the two and used some Tofutti Sour Cream mixed with some vegan creamer...

...poured that over the rolled omelette...sprinkled with some Daiya cheese (supposed to be swiss - but used mozzarella) and some melted Earth Balance...

...and ran that under the broiler for a few minutes...

...and it was absolutely, perfectly delicious...


Substitutions:
Vegan omelette mixture for Eggs
Earth Balance for Butter
Tofutti Sour Cream mixed with some vegan creamer for the whipping cream or crème fraîche
Daiya Mozzarella for the Swiss cheese

VEGAN COULIS DE TOMATES À LA PROVENÇALE

[Vegan Fresh Tomato Purée with Garlic and Herbs]

Julia says this is a thick, concentrated tomato sauce with real Mediterranean flavor...

...start with some onions...cooked in oil slowly for 10 minutes...

...until tender but not browned...

...add some flour...

...then stir in some tomatoes...add some saffron...a small pinch...

...I made my tea ball bouquet garnis with parsley, thyme some fennel, basil and coriander...and the bay leaf and dried orange peel I tossed in separately as they are easy to remove later...

...finish up with some salt pepper and sugar...Julia also says to stir in some tomato paste if you need the colour - mine was bright enough without it...

...we served this with the Omelettes Gratinées à la Tomate...so very good...

Substitutions: None - one of the few vegan recipes I've come across...

VEGAN SAUTÉE DE BOEUF À LA PARISIENNE

[Beef Sauté with Cream and Mushroom Sauce]

...Julia says that this recipe can easily be prepared in 30 minutes...so it was just the thing for a busy Wednesday in Advent...normally we would have an Advent Supper before service at the Church - but that's not possible because of the construction...which reminds me that I need to do another construction update...

I started with a piece of seitan (conveniently made ahead and frozen - but you can start from scratch) - I cooked it in some vegetable broth for about 1 hour...

...then I sliced it in thin strips...and I sautéed some mushrooms - I didn't cover that here again...and set them aside...

...add the 'beef' to the pan with some oil and Earth Balance over moderately high heat...

...cook for 2-3 minutes...

...set the 'beef' aside with the mushrooms and...pour in the wine...

...and stock - I used vegan beef bouillon...

...and cream - I used soymilk with 2 Tablespoons of powdered soymilk added...

...add the seitan 'beef' and the mushrooms back to the sauce and baste the seitan 'beef'...

...pour it over a bed of rice...

...and serve...

...it was delicious and was definitely ready in less than 30 minutes - not including the seitan cooking time - which would have been even longer had I had to make the seitan too...but still a delicious busy Advent weeknight meal...we loved it...

Earth Balance for Butter
Soymilk for Cream
Vegan Bouillon for Stock
Seitan for Beef
