Vegan Épinards au Jambon

[Spinach with Ham]


...a variation on the PURÉE D'ÉPINARDS SIMPLE - first you dice up some 'ham' - TRANCHES DE JAMBON - I'll probably be making another jambon for Thanksgiving - it's that good...anywhooo - dice up a bit...

...stir the 'ham' into the spinach 2 - 3 minutes before the end of the cooking...

...then arrange in a serving dish and place the croutons around the edge...

...these two simple additions (croutons and 'ham') somehow elevate the simple spinach sidedish to something spectacular...

Substitutions: Earth Balance for Butter
Vegan ham for the jambon
