VEGAN GIGOT OU ÉPAULE...Farce aux Olives

[Olive and Ground Lamb Stuffing]

...another variation of stuffing for the vegan Gigot...this one has ground vegan lamb, onions, bread crumbs and Greek black olives...
...I just ground up some of the vegan seitan for the ground lamb...
...added the minced onions and breadcrumbs...and some Kalamata olives...
...stuffed...tied up...and baked as usual...
...served with a salad and a side of spaghetti marinara...
...I love black olives so I thought this version was really good...
...and the spaghetti made a nice accompaniment...

Substitutions

...first...you'll need some Vegan Lamb...recipe here...VEGAN GIGOT DE PRÉ-SALÉ RÔTI... ...and then for the stuffing you'll also need... vegan ground lamb...I just ground up some of the seitan...
vegan butter
vegan bouillon to soak the breadcrumbs

VEGAN GIGOT OU ÉPAULE...Farce Duxelles

[Vegan Ham and Mushroom Stuffing]

...just another variation of stuffing for the Gigot...
...this one starts wtih some minced onions...
...vegan ham and minced mushrooms...
...stuff the Gigot...
...and we tried this new-to-us cauliflower rice mixture...also containing mushrooms...
...and had that and some frozen peas...
...this was a really delicious combination of flavors...


Substitutions

...first...you'll need some Vegan Lamb...recipe here...VEGAN GIGOT DE PRÉ-SALÉ RÔTI... ...and then for the stuffing you'll also need... TVP Ham
vegan butter
