Vegan Soupe à L'Oignon Gratinée

[Onion Soup Gratinéed with Cheese]

...After the Onion Soup recipe - we went on to make it the way we are accustomed to having French Onion Soup - that is Gratinéed with Cheese...

...so first we made the little Croûtes...then we ladled the soup into our cute little soup cups (recognize those Mom?)...

...and floated a Croûte on top of each bowl of soup...sprinkled on some more cheese and a little olive oil and ran that under the broiler til it got all bubbly and brown...

...Ahhh...now that looks like the French Onion Soup we're accustomed to...

...delicious...even if it was a little messy getting a bite of croûte with your soup...

Substitutions:
Daiya cheese for the Swiss Cheese
Vegan French bread

  1. This looks amazing! I can't remember the last time I had french onion soup. I am pretty sure it was over 16 years ago before I became a vegetarian. I don't think I have had a veg version. Thanks for sharing!
