A very simple recipe - used in conjunction with other recipes...

16-18 peeled onions in a single layer with some white stock - white wine - or just plain water...

...and an herb bouquet consisting of parsley, bay leaf and thyme...
That's pretty much it - Julia says they may be cooked several hours before they are needed.
