VEGAN SOUPE À L'OIGNON

[Onion Soup]

...One of Scout's favorite soups is French Onion Soup...

...we began by slicing some onion - these were supposedly sweet onions - but they didn't seem all that sweet when we had them with cornbread and navy beans the other night - still - they should do fine cooked here...

...cook slowly without browning for about 15 minutes...

...add some salt...

...and a little bit of sugar - Julia says this will help the onions brown - wait - I thought she said NOT to brown them...cook 30-40 minutes more - mine never did brown...

...add some flour and stir for 3 minutes...

...then off heat - stir in your hot stock - I used the Orrington Farms® All Natural Vegetarian Vegetable Flavored Base...

...add some wine...

...reheat to a simmer - and simmer partially covered for 30-40 more minutes...

...just before serving - stir in some cognac...

...I've never seen French Onion soup that wasn't gratinéed with cheese - but Julia says to pour the soup over rounds of bread and pass the cheese separately...

Substitutions:
Earth Balance for Butter
Vegan Broth for broth
