VEGAN OIGNONS GLACÉS À BLANC

[Vegan White-braised Onions - Glazed Onions]
A very simple recipe - used in conjunction with other recipes...

16-18 peeled onions in a single layer with some white stock - white wine - or just plain water...

...and an herb bouquet consisting of parsley, bay leaf and thyme...

That's pretty much it - Julia says they may be cooked several hours before they are needed.

VEGAN BIFTECK HACHÉ À LA LYONNAISE

[Ground Beef with Onions and Herbs]


I was surprised that there was a Ground Beef recipe in Mastering the Art of French Cooking...but Julia even says...Shock is the reaction of some Americans we have encountered who learn that real French people living in France eat hamburgers...funny...

...so, first I needed to make some 'ground beef' - I've used some of Bryanna's recipes for burgers before and we really like them - but I have a friend who is gluten intolerant so I wanted to try a gluten free burger - and I found Sarena's Blog the Non-Dairy Queen and her recipe for Bean Balls...

....I cooked some lentils and quinoa in vegetable broth...

...about an hour until all the liquid was absorbed...

...From Julia's recipe I minced up some onion...

...and cooked for about 10 minutes until very tender but not browned...

...then from Sarena's recipe - some oats...

...I gave those a whirl in the food processor...

...then I added the onions, salt, pepper, thyme, softened Earth Balance, and a vegan egg (flax seed goo) - to the quinoa and lentil mixture...

...then the oats and mixed it all together...I guess my fingers were too messy for a photograph - I don't know why I don't have a picture of the mixture...

...spread some flour on a plate...

...form your patties and roll them lightly in the flour and shake off the excess...

...put some butter and oil in a pan and sauté the patties...

...until they are golden brown...

...Julia says to pour 1/2 cup of stock into the pan and scrape the bottom of the pan...

...she says you can use white wine - so I used some of both...

...arrange the burgers on a platter and pour the hot sauce over...

...these were so good - just the right amount of crispness on the outside and just the right amount of juiciness on the inside...the thyme I think just somehow makes them very French...we loved them...and I'm looking forward to a couple more of the Bifteck Haché recipes...

Since this was a hodge-podge of a recipe I'm posting exactly what I did for the burgers:

VEGAN BIFTECK HACHÉ

1/2 cup uncooked quinoa (make sure you rinse quinoa really well!)
1 cup uncooked lentils (rinsed and drained)
4 cups water or vegetable broth

Cook quinoa and lentils for about 1 hour until all liquid is absorbed.

Process 2 cups of organic oats in the food processor into a coarse meal.

then add:

1/4 cup flax seed goo
2 Tbs. softened Earth Balance
1 1/2 tsp salt
1/8 tsp pepper
1/8 tsp thyme
2 cups ground oats - measured before processing.

Mix well with your hands and form into patties.
Coat patties lightly with flour and sauté in 1 Tbs of oil and 1 Tbs of Earth Balance

Vegan Omelette Aux Épinards

[Omelette with Spinach]

...Yesterday was Sunday...so of course we had Brunch for Lunch after Church...

...A variation on the Omelette...and you'll need some Spinach...

...I used frozen organic spinach this time...

...you only need 2 to 3 tablespoons per omelette...

...proceed with the omelette as usual...

...I just did a simple folded omelette...

...it turned out so pretty...

...and with the tender spinach inside...

...it was delicious!...

Vegan Eggs for Eggs

Vegan Champignons Sautés à la Bordelaise

[Mushrooms Sautéed with Shallots, Garlic, and Herbs]

...Julia suggests this dish as a garnish - but we love mushrooms so for us - it's more of a side dish - it goes perfectly with Vegan Steak au Poivre...

...This is a variation of the CHAMPIGNONS SAUTÉS AU BEURRE so you follow those directions...

...sauté the mushrooms in Earth Balance and oil...

...until lightly browned...

...make some bread crumbs...

...I just toasted some white bread until it was fairly dry and then gave it a whirl in the food processor...

...add some shallots, garlic, and the bread crumbs to the mushrooms...

...stir that around - add some salt and pepper...

...I'm always surprised by how much mushrooms cook down...

VEGAN QUICHE LORRAINE

[Cream and Bacon Quiche]

...y'all know how busy our Wednesday afternoons are - with Confirmation, Adult Bible Study, Choir Practice, and Ju-Jitsu...so we need a supper that's ready to eat during the half hour that we have to eat it in...

...I thought I'd bake a nice quiche and just let it sit in the warm oven until we could rush over and gobble it up...

...I was surprised that Julia says that the classic Quiche Lorraine has no cheese - just cream eggs and bacon...so I just crisped up my facon under the broiler...

...got out my previously prepared Pâte Brisée...

...mixed up my Vegan Egg Omelette recipe and added some pepper and nutmeg...

...pressed my facon into the bottom of the pie crust...

...poured the 'egg' mixture over the bacon...

...and baked for about 40 minutes (Julia says 30) until puffed and golden brown...

...we served this with a simple salad of hearts of romaine leaves that we dip into our dressing...fun!...

...it was really simple...

...and really good!...

Substitutions:
Vegan egg mixture for the eggs
Vegan creamer for the cream
Vegan bacon for the bacon

VEGAN PÂTE BRISÉE

[Short Paste, Pastry Dough, Pie Crust]


...this recipe calls for stick butter (so I got some Willow Run out of the freezer) and shortening...

...add a little salt...

...blend it with a pastry fork...

...Julia does this with her fingers - but since she has told us to work as quickly as possible so that the butter (Willow Run) doesn't melt - I figure the less I have my hot little hands in the dough the better...it should resemble oatmeal flakes...

...add a little bit of iced water...

...then the next step is the fraîsage - this is the final blending of fat and flour...

...roll it into a ball and wrap it up and let it sit in the fridge for at least an hour...

...again, Julia warns us to work quickly when we're rolling to avoid melting the butter (Willow Run)...

...I like a nice thin crust...you can almost see the letters on the pastry board through the crust...

...roll it up on your rolling pin...

...and unroll it over your quiche pan...

...press lightly into the bottom of the pan - this one won't be baked before the filling goes in...
