VEGAN ORANGES GLACÉES

[Glazed Oranges - a cold dessert]

...I had several oranges left from our Christmas basket and thought they'd go perfectly with our brunch...

...start by removing the skin with a vegetable peeler...

...then cut the peels into strips...

...and simmer in water for a few minutes...

...then cut off the bottom so that the orange will stand still...

...and peel away the white part...

....Julia says if you prefer sliced oranges...I thought a whole orange would be too difficult to eat with a fork and a knife...

...to slice them horizontally...

...and then to re-form them in the serving dish...I'm using individual serving cups - but I think this would be pretty served in - say - a white quiche dish...

...strain your peels...

...and dry them on paper toweling...

...sugar and water in a saucepan...

...bring to a boil - it needs to get to the firm ball stage - 244⁰ F (118⁰ C)...

...drop the blanced peel into the syrup and boil a moment or two...

...spoon over the oranges and chill until serving time...

...so pretty and somehow wintry...

...really they were perfect - the boys loved the stringy syrup (but not the peels) - which was a nice complement to the tart oranges...

...A simple dessert - I highly recommend it...

Vegan L'Omelette Au Fromage

[Omelette with Cheese]

...Scout has a friend staying for the weekend and of course I'm that weird Mom who fixes all that weird food...but after Church we had our regular brunch for lunch with omelettes - that's not too weird is it? - everyone has heard of omelettes - right...

...I even made the most innocuous of omelettes - the Cheese Omelette...

...just the regular Omelette batter and process...

...then after the 'eggs' have set - sprinkle with a couple of spoonfuls of cheese - Julia suggests Swiss or Parmesan - I used Daiya Mozarella - dot with butter and run under the broiler...

...we also had a fancy orange dessert - I'll post about it in a little bit...

Vegan Omelette mixture for eggs
Daiya Mozarella for cheese

VEGAN SOUPE AUX CHOUX - GARBURE

[Main-Course Cabbage Soup]

...It's been so cold that all I can think of making is soup...

...luckily Julia has a warming Cabbage Soup that we had not tried yet...

...so good when the temperature is below zero...

...you start with potatoes and vegan bacon in a pot...

...grind up some peppercorns...

...chop up some cabbage...

...put some herbs in cheesecloth...or a teaball as the case may be...

...get that all steaming in a pot...

...you're supposed to put some cloves in an onion - but I put mine in the tea ball with the other herbs and sliced the onion...

...quarter some carrots...

...mash some garlic...

...and add some drained red beans at the end...

...take out the tea ball...

...and the bay leaf...

...pour the soup into a tureen...

...and serve with some crusty whole wheat bread - a delicious winter meal...

Vegan Caneton à l'Orange

[Roast Duck with Orange Sauce]

...So, this was our Christmas Dinner...

...the main course was the Duck with Orange Sauce - and it was almost too perfect...

...I started early in the afternoon simmering some soymilk to make the Yuba...

...I've never made Yuba before but my Book of Tofu has excellent instructions on how to make it...

...this is my first poorly formed sheet of yuba - and I didn't have any place to hang my sheets to dry so I had lined the counter top with parchment and laid the yuba sheets there to dry a bit - I got better at is as I went along...

...the skin would form every 5-6 minutes or so...

...and I would lift it off and set it to dry a bit - see I got better at it...

...then I got worried that they were still too wet - so I got out the dehydrator...and dried the sheets for a few minutes there - it made handling them much easier...
...and by the end I was getting full - intact - yuba sheets from my round pot...

...then I sort of followed the recipe on Bryanna's blog for Roast Duck...but I didn't want an Asian flavor - so I used just a little bit of sesame oil mixed with some canola - to brush over the sheets...

...first I brushed some oil on the parchment and then on top of each sheet of yuba...

...I just kept layering and brushing...

...I used up all my sheets - even the not so pretty ones...

...and I baked my 'duck' instead of frying it...

...it puffed up so nicely...

...then I got busy on the sauce...I peeled some oranges...

...that always smells so good...

...then julienned the strips...

...boiled them in water...

..then drained them...

...then made the sauce base...with wine vinegar and sugar...

...vegetable stock...

...and arrowroot powder mixed with red wine...

...simmer until clear, limpid and lightly thickened...

...add the orange peels...

...then you were supposed to cut the oranges into neat skinless segments - I've done this successfully before - but not today - my segments pretty much fell apart...

..arrange the orange 'segments' over the 'duck'...

...add some orange liqueur to the sauce...

...then stir in some butter (Earth Balance)...

...pour the sauce over the 'duck'...

...and serve...

...it was so very good - Scout loved it - I really have no idea what duck tastes like - but this was very rich - sweet and orangey - and layers of chewy nutty goodness surrounded by a crispy 'skin'...

...really a perfect Christmas Dinner...
