VEGAN SOUPE AUX CHOUX - GARBURE

[Main-Course Cabbage Soup]

...It's been so cold that all I can think of making is soup...

...luckily Julia has a warming Cabbage Soup that we had not tried yet...

...so good when the temperature is below zero...

...you start with potatoes and vegan bacon in a pot...

...grind up some peppercorns...

...chop up some cabbage...

...put some herbs in cheesecloth...or a teaball as the case may be...

...get that all steaming in a pot...

...you're supposed to put some cloves in an onion - but I put mine in the tea ball with the other herbs and sliced the onion...

...quarter some carrots...

...mash some garlic...

...and add some drained red beans at the end...

...take out the tea ball...

...and the bay leaf...

...pour the soup into a tureen...

...and serve with some crusty whole wheat bread - a delicious winter meal...

Substitutions:
Earth Balance for Butter
Vegan Bacon for the bacon
