VEGAN RATAOUILLE

[Eggplant Casserole - with tomatoes, onions, peppers, and zucchini]
...sorry to be so long gone from all the Vegan Mo-Fo action...the wedding was a lot of fun...

...so on the menu today we have Ratatouille... ...and I couldn't resist the Three Stooges Ratatouille-Dee-Dee song...it's at about minute 6...enjoy...
...so...you start by cutting up some vegetables...eggplant...
...peel and slice the eggplant...and sauté one layer at a time...
...do the same with the zucchini...
...I sautéed the peppers and onions together...and I chopped my onions instead of slicing them...I just don't like long stringy onions...stir in some garlic...
...slice up your tomato...
...and then begin layering everything in the casserole...I had a little assembly line going...tomato...pepper...zucchini...aubergine ...then I sort of just sprinkled the onions over the top when I had it all nicely arranged...
...it was a pretty dish going in...and it was lovely coming out...and it smelled so good...
...but be warned as Julia says that "a really good Ratatouille is not one of the quicker dishes to make...

...and it really does take a while to sauté everything separately...then after that the assembly takes a little bit of time...but then it's just baking time...

Substitutions:

...absolutely none...nada...one of the rare MtAoFC vegan dishes...
