...so first we made the little Croûtes...then we ladled the soup into our cute little soup cups (recognize those Mom?)...

...and floated a Croûte on top of each bowl of soup...sprinkled on some more cheese and a little olive oil and ran that under the broiler til it got all bubbly and brown...

This looks amazing! I can't remember the last time I had french onion soup. I am pretty sure it was over 16 years ago before I became a vegetarian. I don't think I have had a veg version. Thanks for sharing!
